Red beet salad

It says that red beet should be eaten every week. Very healthy, blood foming and have much more positve effect. Here is a simple recipe, don’t need to cook, can be eaten fresh.

Ingredients:

  • 1 pc mid size red beet
  • 1 smaller leek
  • 2 cloves of garlic
  • feta cheese (125 g)
  • 1 tbsp cider vinegar
  • a pinch of salt

Rasp the red beet to stripes, thinner or thicker it is up to you (you even can use your food processor, that way you can save cleaning the tiles from the pink dots after), cut the leek to thin slices, smash the garlic too and dice the cheese. Mix everything, add some salt and sprinkle as much cider vinegar (or balsamic vinegar if you like it better) as you like. Let it stand an hour or two.
