Poppy seed pie with homemade apricot jam

Ingredients:

  • 3 eggs
  • 250 g sugar
  • 3 dl cream
  • 200 g grout poppy seed
  • 200 g flour
  • 1 pack of baking powder
  • 1 lemon’s rasped peel
  • butter
  • a pinch of salt

Mix the sugar with eggs, half of the cream, then add the poppy seed, flour and baking powder. Wash the lemon well and rasp the lemon-peel into the mixture. Dilute it with the rest of the cream and put into buttered baking-sheet. Preheat the oven to 160°C. Bake the pie slowly, during 30-40 minutes till it rise. Check with needle probe. Serve with home made jam or vanilla pudding. It is so simple to prepare.
