Rosemary bacon wrapped pork medallion

I like the pork medallion since it is easy to bake and ready within a short time. Here is my Rosemary bacon wrapped pork medallion recipe.

Ingredients for 4 person:

  • 800 g pork medallion
  • 4-5 slice bacon
  • a handful fresh rosemary
  • salt, freshly ground pepper
  • 100 ml white wine, dry
  • 1-2 pcs potato
  • some tomato
  • 100 g mushroom
  • 1 zucchini (mid size)
  • 1 fennel (mid size)
  • olive oil

Chop the washed vegetables into equal dices and rings. Cover a baking pan with baking paper, then put the vegetable on it. Season with salt and freshly ground pepper, finally sprinkle with some olive oil. Bake in preheated oven (~220 °C) till the vegetables well baked. Approximately 40 min.

Season both side of the pork medallion with salt and freshly ground pepper. Chop the rosemary and sprinkle on top of the medallion, then wrap the meat around with the bacon. Smear with olive oil a baking pan, put the pork medallion into and pour the wine under it, cover the baking pan with foil and put into the oven for 20 minutes, if possible bake together with the vegetables (on a different level in the oven). Next step is to remove the foil and let the top fry a bit more until to golden.
