Potato soup with sausage

Easy to prepare, delicious and filling creme soup.

Ingredients:

  • 2 pcs carrots
  • 1 quarter celeriac
  • 2 pcs mid size onion
  • 2 cloves of garlic
  • 0,5 kg potato
  • 100 g good quality sausage
  • 1 coffee spoon curry
  • 2 chicken or vegetable stock of cube
  • salt, pepper
  • olive oil
  • 1 bunch of parsley

Dice the carrot and celeriac, cut the onion for bigger pieces and dice the garlic and potato as well. Hint the onion onto 2 spoon of heated olive oil, fry for 1-2 minutes and immediately add the vegetables and curry. Shuffle and fry for about 10 minutes, so the carrot can get softened, but take care not to smoke it! In 1l of boiling water dissolve the stock of cube then mix it with the vegetables. Between these slice the sausage and cut the parsley and finally add these too. Boil for a bit and on small fire cook until the potato won’t be soft. Use your hand held blender, add salt and pepper based on your flavor.
