Ingredients

  • 2 ripe avocados

  • half a medium purple onion, chopped

  • 1 medium tomato, seeded and chopped

  • juice of half a lemon

  • salt and pepper

  • a few drops of chilli olive oil or half a chilli, seeded and chopped (optional)

Directions

  • Mash the ripe flesh of the avocado with a fork; if it doesn’t mash easily, it’s probably not ripe enough. Mix the onion and tomato, squeeze the juice from the lemon, you can also use lime. I like it a bit hot, so if I can, I add a few drops of chilli olive oil, as fresh chilli is not always available at home. Finally, add a pinch of salt and pepper, mix well and serve with toast.
