Homemade ketchup

Ingredients

  • 24 kg tomatoes

  • celery

  • parsley

  • 1 pc onion

  • 4 tbsp salt

  • 12 tbsp sugar

  • 400 ml 10% vinegar

  • 2 tbsp mustard seeds

  • 1 tbsp pepper

  • 1 tbsp allspice

  • 1 tbsp cinnanom

  • 8 cloves

  • 6 cloves of garlic

Directions

  • To 24 kg of crushed tomatoes we add a teaspoonful of chopped celery and parsley, 1 chopped onion, 4 spoonfuls of salt, 12 spoonfuls of sugar, 4 dl of 10% vinegar, 2 spoonfuls of ground mustard seeds, 1 spoonful of crushed pepper, 1 spoonful of crushed allspice, 1 spoonful of cinnamon, 8 cloves, 6 cloves of crushed garlic. Boil this mixture until it is no longer jam-like, then filter it through a sieve and pour it into a glass of 2-3 dl and seal it airtight.
