Baked gnocchi with tomato and bacon

Baked gnocchi with tomato and bacon. Super easy to make, fast and delicious.

Ingredients:

  • 500 g store-bought gnocchi
  • 250 g bacon, minced
  • 2 cloves garlic, chopped
  • 1 tsp red pepper, grounded
  • 1 tin chopped tomato /400g
  • a handful cherry tomatoes
  • 100 ml cream
  • a handful fresh parsley
  • salt, pepper
  • 100 g mozzarella, sliced
  • 1 tbsp olive oil
Baked gnocchi with tomato and bacon

Cook the gnocchi in a slightly salty water as it is described on the packaging then drain the water from it. Meanwhile fry the bacon on some olive oil. When it is almost ready remove the bulk of the fried fat then add the garlic and fry further a couple of minutes. Add the tomato (both the can and cherry), cream, seasons and cook 10 minutes. Mix with the cooked gnocchi. 

Put in a pot you can use in the oven, cover with the mozzarella cheese and bake 10 minutes on 200°C or till at least the cheese get browned..
