Whole baked chicken

I looked for a duck but I got only a chicken. The final result is a delicious, crispy chicken, spiced with little sweet taste due to the apple cider. Of course I do not give up on the duck.

Ingredients:

  • a whole chicken 
  • 2 pcs onion 
  • 2 pcs carrot 
  • 2 pcs white beet 
  • a clove of garlic 
  • salt, pepper 
  • one lemon 
  • fresh herbs: thyme, rosemary, bay-leaf, clary 
  • oil 
  • 200ml apple cider

Preheat the oven to 240°C.

Peal the vegetables and onions then cut into bigger pieces. Take the garlic to cloves, but don’t husk them. Prepare the chicken, season both side with salt and pepper, fill inside the lemon (make some holes on the peel with the point of a knife) and the mixture of of herbs. Put the vegetables in a pan, sprinkle some oil on it and place the chicken to the central. Season the top of the chicken with some herbs too. Pour under the cider and water.

Put into the oven, decrease the temperature for 200°C. Bake for 80-100 minutes, until it has beautiful golden brown color. Occasionally sprinkle the chicken with it’s own gravy. You can make sauce with the rest of the gravy, if you thicken by some flour and tomato puree.
