Baked chicken with red lentil

Ingredients

  • 1 onion, chopped

  • 3-4 cloves of garlic

  • 200 g red lentil

  • 500 ml chicken stock

  • 8 pcs drumstick (ca. 1,5 kg)

  • salt and pepper

  • 2 tbsp rape oil

  • 2 sprigs of rosemary

Directions

  • Preheat the oven to 180°C. Meanwhile in a pan that can be used in the oven and the drumsticks fits tightly, fry the onion on the rape oil. Add the sliced garlic, rosemary, salt and pepper. Stir for a few minutes then add the red lentil. Sprinkle salt and pepper on both sides of the drumsticks, place them with the skin side up into the pan. Pour on the chicken stock until only the top of the skin is out (so it can get golden). Get it to boil then put the pan in the oven. Bake uncovered for an hour. Make sure the meat baked all the way, if necessary bake 10-15 minutes further. Season the red lentil sauce with salt and pepper to your liking. 
  • Serve with chopped fresh parsley on the top and/or with steamed broccoli.
