Pearl barley with ham and leek

Ingredients:

  • 200 g pearl barley
  • 100 g kale (diced)
  • 2 pcs carrot (diced)
  • 1 pc leek (sliced thinly)
  • 2 cloves of garlic (sliced thinly)
  • 200 g ham (diced)
  • 1 l broth
  • 1 tbsp Dijon mustard
  • pepper
  • oil

First of all soak the pearl barley for some hours, so the barley will be ready sooner. Heat some oil in a larger pan, sear the ham, then put aside. Pour some more into the remaining oil, slightly sear the leek for a few minutes, then add the garlic, sear for more 2-3 min. Add the carrot, pearl barley, dijon mustard, broth, season with pepper, mix them, cook simmer with occasionally stirring for an hour. Add the ham and kale, mix and sear for 5-10 minutes.
