Baked vegetables with minced meat

We bake veggies pretty rear which is a pity as very delicious flavors can be experienced. Furthermore it is simple, don’t have to spend hours with the creation. Add some meat and here is the superb lunch and it can be a one course dish too. Here is the Baked vegetables with minced meat recipe.

You don’t need just variety of vegetables. From the hard ones you can choose potato, carrot,chard, red beet, celery. From the soft ones asparagus, broccoli, egg plant, cauliflower, zucchini could be put under the knife. Cut them to 3-5 cm pieces, put onto baking paper, add salt, pepper, sprinkle with olive oil and insert into the preheated oven (200°C). With no shuffling bake it for 20 minutes, if by this time pieces comes off from the paper, you can shuffle them once. Bake further until it gets golden-brown, it is ~20-40 minutes more.

While the vegetables in the oven, chop some onion. Fry it in a pan on some butter, make sure the minced meat (500g) is in 1:1 ratio with the baked vegetables. Season with salt, pepper and chopped rosemary (1-2 branch) Once the meat fried, mix with the vegetables and serve with fried eggs.
