Zucchini cream

As I promised here comes the zucchini creame recipe. Personally I prefer the eggplant crème or tuna cream but the cold zucchini cream on toast is tasty too. Especially when you enrich with goat cheese and dill.…

Ingredients for 2 person:

  • one smaller zucchini, approx. 300 g
  • 1 pc onion
  • 1 cloves garlic
  • 50 g goat cheese
  • 1 tbsp dill
  • salt, pepper
Zucchini cream

Chop the onion, garlic, zucchini and sear together on some preheated oil. Be aware not to burn it. If it is ready, remove from the heater, let it cool a bit then place in the blender. Season with salt and pepper, add the cheese and the dill. Mix them to as smooth as you wish. Coolly on toast it is like manna!
