Caramella semolina

Falling into sweet sin…I know, I know, sweets again, but well I am sweet tooth 🙂 additionally it is not so much effort to make this sweets.

Stir 3 egg yolk with 50 g sugar, one heaping teaspoon mixed semolina flour. Caramelize 50 g sugar then liquefy with half liter milk, boil it while continuously shuffle. After it has boiled remove from the cook top, add the egg yolk then cook again till boiling, but beware not to cook else the egg can precipitate. So, now the caramel sauce is ready. Let it cool.

Cook the 70 g semolina in half liter milk with continuous stirring on medium fire till it start thicken. Meanwhile whisk 3 egg-white with 50 g sugar. Mix the mousse into the hot semolina, put into forms and let to cool in the fridge to became jelly. Serve together with the caramel sauce, rasp chocolate onto and sprinkle with cinnamon so that looks better.
